Thanksgiving Day Recipes: Editors' Favorites

Amazingly Simple Turkey

Directions:
If frozen, thaw turkey according to directions (must be completely thawed before cooking)
Inner cavity should be free of innards
Rinse turkey and cavity in water, pat dry
Pam a large roasting pan
Rub vegetable oil on turkey, salt and pepper, generous amount of onion power and garlic powder.
Cook according to directions.
Cover with foil to prevent early browning or burning and help lock in moisture.
During the last 40 minutes of roasting, remove foil.
If you choose, you can use the juices in the pan that the turkey will produce and use as a basting sauce.


Turkey Dressing

Ingredients:
4 cups diced celery
1 cup chopped onion
1 stick butter or margarine
4 qts. (8 pints) dry bread cubes (leave bread out the night before, cube stale bread)
1 Tb. salt
1 1/2 tsp. poultry seasoning
1/2 tsp. sage
1/2 tsp. pepper
Enough chicken broth to moisten (about 3 cups)

Directions:
Saute celery and onion in margarine until transparent. Mix with bread cubes, seasonings and broth in other bowl. Mix and stuff turkey.


Ham and Cheese Quiche

Ingredients:
2 Cups Chopped Ham
1 Cup Shredded Swiss Cheese
1/3 Cup Chopped Onion Sautéed
2 Cups Milk
(Reduce to 1 ½ Cups if necessary)
1 Cup Bisquick
4 Eggs
1/8 Teaspoon Pepper
(or season to taste)

Directions:
Heat Oven to 400 degrees
Grease Pie Plate
Sprinkle ham, cheese and onion.
Beat remaining ingredients until smooth.
Pour over cheese and bake for 35 to 40 minutes

Use deep dish pan. A regular pie dish won’t hold it all and it becomes
soggy.
If you don’t have a deep dish then use 1 ½ Cups of milk (See above)




Bavarian Apple Tart

Ingredients:
Crust:
1/2 c. Butter
1/3 c. sugar 1/4 tsp. vanilla
1 c. flour
Filling:
1-8oz cream cheese
1/4 c. sugar
1 egg
1/2 tsp. vanilla
Topping:
4 cups slice apples
Directions:
Crust Mix:
Cream butter, sugar and vanilla
blend in flour
spread on bottom of springform pan and 1/2 way up sides
Filling Mix:
Combine cream cheese, sugar and mix
add egg and vanilla and mix
pour into pastry
Topping: 1/3 c. sugar
1 tsp cinnamon
toss with apples and spoon over cream cheese
sprinkle with almonds (1/4 c. if desired)
Bake 450 degrees- 10 mins.
reduce temp to 400 degrees- bake 25 additional minutes

Cool and remove rim
Refrigerate


Apple Crisp

Ingredients:
• 10 cups thinly sliced apples
• 1 cup white sugar
• 1 tablespoon all-purpose flour
• 1 teaspoon ground cinnamon
• 1/2 cup water
• 1 cup quick-cooking oats
• 1 cup all-purpose flour
• 1 cup packed brown sugar• 1/4 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/2 cup butter, melted

Directions:
1. Preheat oven to 350 degrees F (175 degree C).
2. Place the sliced apples in a 9x13 inch pan. Mix the white
sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle
over apples. Pour water evenly over all.
3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple
mixture.
4. Bake at 350 degrees F (175 degrees C) for about 45 minutes


Sweet Potato Casserole

Ingredients:
3 lbs. sweet potatoes
1 1/2 c. sugar
1/4 tsp. salt
3 large eggs, slightly beaten
1/2 c. melted butter
1- 5 oz. can evaporated milk
1 tsp. vanilla
1 tsp. nutmeg
1/2 tsp. cinnamon
Topping
2 c.brown sugar
1 c. butter
3 c. chopped pecans

Directions:
Wash,peel and cube sweet potatoes. Boil until soft (approx. 30 min). Drain. Mash until smooth adding rest of ingredients except topping. Stir until well mixed. Lightly grease a 2 qt. dish & pour in mixture. Topping: mix ingredients and spread on top. Bake at 350 degrees for 35-40 min.


Broccoli and Rice Casserole

Ingredients:
12-14 oz. frozen broccoli (or 2 large and fresh broccoli crowns)
1 jar of Cheese Wiz (use the spicy kind if desired)
1 yellow onion
1 stick of butter
1 can cream of mushroom soup
1 package of minute/ quick rice

Directions:
Cook rice to directions. Boil broccoli in salted water until until slightly soft. Drain both.
In large skillet, sauté onion in butter until clear. On low heat, add soup, cheese wiz, and broccoli. Thin with milk if desired, add rice.

Place in greased (Pammed) casserole dish. Sprinkle with bread crumbs and paprika. Bake at 350 degrees for 20 minutes or until bubbly.
